L’Éclair de Génie in Paris

In the mood for éclairs? Then you have to try these!

It couldn’t have been a more perfect night yesterday when Johan arrived after 3,5 weeks apart. I met him on the bridge Pont Neuf. I could feel the raindrops start falling from the sky when I saw him, I run the last few meters to jump up in his arms in a big embrace. It felt like I was in a romantic french movie, kissing in the rain on the middle of Pont Neuf with the gorgeously lit Paris surrounding us and with the Eiffel tower in the background. We strolled back to my apartment where I had prepared with candles, wine and éclairs from the one and only L’éclair de Génie with a french playlist playing softly in the background. We tried these éclairs and this is the result.

Det kunde inte ha blivit mer lyckat igår, jag mötte upp Johan på Pont Neuf efter 3,5 veckor ifrån varandra. Precis när jag ser honom så känner jag hur regndropparna börjar falla från himlen, jag springer sista biten för hoppa upp i hans famn. Det kändes som vi befann oss i en romantisk klyshig fransk film, kyssandes i regnet på mitten av Pont Neuf i ett kvällsupplyst Paris med Eiffeltornet i bakgrunden. Vi traskade sedan hem till lägenhet där jag förberett med levande ljus, vin och éclairs för oss att avnjuta samtidigt som min franska spellista spelades i bakgrunden. Vi testade dessa frånL’éclair de Génie och här har ni resultatet.

Vanille noix de pécan: Crème vanile de Madagascar, noix de pécan caramélisées. I loved it, the caramelized pecans on top was the perfect addition. Creating a delicious contrast to the more sweet vanilla cream inside. This was Johan’s personal favourite. I give it 4/5.

Caramel beurre salé: Mascarpone caramel beurre salé. I am a sucker for caramel and I love the typical french caramel that is a bit more salty and intense in the flavour. This one scores 4,5/5 in my opinion.

Praliné amande: Crème mousseline praliné et amande, amandes grillées. This was amazing! The creamy filling was out of this world delicous! And the almond nuts on top gave that crunch that it needed to compensate for all the creaminess. I give it 5/5.

Rouge framboise: Crème framboise, chocolat grand cru et chocolat au lait. This was a divine experience. I love the richness of the strawberry flavour in combination to the chocolate cream inside. It was pure heaven. I give it 5/5.
